The northeastern part of India is a sanctuary of wonderful delights and unsullied exquisiteness. The spectacular seven states of northeast India are Arunachal, Assam, Manipur, Meghalaya, Mizoram, Nagaland and Tripura. The food from these seven states harmonizes the pristine beauty of nature and their people. The food and the music, here, embody the culture of the people. Join us on our travels as we try and discover the mysteries of the sisters. The journey through the seven states will not only widen our horizon of cooking experiences but it also will create an openness of the mind and soul.
The main diet of people in this part comprises of non-vegetarian food accompanied by seasonal vegetables. Fish is a chief favourite in Assam, Tripura and Manipur due to its great availability in the intricate network of rivers of the region. In Manipur people often rear fish in ponds, which they then dry, smoke or ferment for future use. The other states also enjoy fish in their meals but this is determined by it’s availability. There is also a preference for meat in Meghalaya, Nagaland, Mizoram and Arunachal Pradesh.
Although rice is common to all the diets, the cuisines of the different states is very diverse indeed. In Nagaland for example, the food is mostly boiled and cured, whereas, Manipuri food is quite spicy and full of chilli peppers.
