The geographical feature of a place greatly determines the food habits of the people living there and so it is in the seven states of North East India. Their traditional cuisines are either boiled or steamed with little spice and little oil. Local herbs such as garlic, ginger, chilli and bamboo shoots are used to flavour the dishes. With globalisation, however, the modern cuisines of northeast have greatly changed. None the less, the various traditional dishes of the northeast remain the pride of the people.
